Since I’ve cut processed foods out of my diet almost completely, I’ve noticed something. If I order pizza or eat out on a lazy or busy night, my body rebels. So on nights where I don’t feel up to making a complete meal out of Nourishing Traditions I need something quick, cheap and tasty that won’t leave me with a processed food hangover. Migas are one of my favorite “real fast food” meals to make. According to Sally Fallon, as long as corn is nixtamilized, or treated with lime, it’s a properly prepared grain, so as long as you use a good fat to cook your migas, pastured eggs and dairy from grass fed cows (I use Kerrygold cheese) this definitely fits all my criteria for a real, traditional dish. You could even go so far as to use lacto-fermented salsa, although I just used Costco’s organic salsa this time.
- 5 eggs
- 2 Tablespoons salsa
- 4 corn tortillas torn or cut into small squares (Buy non-gmo corn tortillas here)
- 1/2 onion diced
- 2 Tablespoons coconut oil or lard from pastured hogs
- Jack or Cheddar Cheese
- Diced tomato
- More salsa
- Hot sauce
- Sour cream
Heat oil or lard in cast iron skillet until it sizzles when you drop a little water into it. Fry tortilla pieces until they begin to brown and then throw in the onions and cook them until they begin to soften.
Meanwhile, break the eggs into a bowl and add the salsa and whisk them together. Add them to the fried tortillas and onions and scramble them until they are cooked.
Plate and garnish.
Other ideas: Add mushrooms or green bell peppers after the tortillas, use green chilis instead of salsa, put a few drops of hot sauce in your eggs before cooking them.
Suggested Side: Bacon!
